easy, but not yummy.
Yes they are all over the county. Yes they have convenient hours. Yes they are consistent, but the consistency is that the food always tastes generic. My Hungarian Jewish grandmother makes a tastier burrito. And $9.25 for enchilada plate??? It's a tortilla, with cheese and canned enchilada sauce.
I try about once a year for the last 12 years and each time, I am unimpressed.
Usually when the food is dull, you can usually cove it up with some salsa, but even here the salsa falls short of flavor!

Edible, but not great.
I was craving some yummy enchiladas for dinner tonight and our usual place was closed, so my husband stopped by Taqueria Vallarta instead. They were the most uninteresting enchiladas I have ever eaten. TJs enchilada sauce is, sadly, more exciting than the Italian marinara sauce they used. Truly, it tasted like straight up tomato sauce. The beans were alright, but not special and the rice, well, it's *really* hard to go wrong with the rice. I don't think we'll go back during my next enchilada plate craving. I am still eating them, and I think "edible" is the only word that comes to mind when I try to sum it up.

good fast mexican food.
I like the location and the atmosphere of this place. I really like the nachos and also the tostada. The employees are nice, the place is clean, and the food comes out quick. You even get chips and salsa while you wait. The prices are decent as well. Great place to stop for lunch.

Trip;e Deluxe! Cheap, Delicious, Fast!.
Simply put, I love Vallarta. They are fast, cheap, and delicious. And consistent. And open late. Even though it is a fast food-ish place, I think it is better than most actual Mexican restaurants. Is there anything better than their carnitas? Only sopapillas could make it better.
